Taiwanese or Japanese onigiri: not the same

In Japan, onigiri is generally triangular, with a small filling in the center (salmon, umeboshi plum, tuna mayo) and a nori sheet around. In Taiwan, fan tuan (the Taiwanese equivalent) is larger, cylindrical, usually rolled in a wider nori sheet or sometimes without nori. The filling is generous and combined: braised pork + crispy you tiao + preserved radish + egg, for instance. A full meal in hand, not a snack. MAISON LE TE serves the Taiwanese version.

Classic braised pork: pork simmered 5h in soy-anise-cinnamon, crispy you tiao for crunch, preserved salted radish, hard-boiled egg. Teriyaki salmon: smoked salmon with house teriyaki, fresh cucumber, black sesame. Vegan smoked tofu: smoked tofu with shiitake, edamame, preserved radish. Sweet matcha onigiri: red azuki bean paste, shredded coconut, in a light matcha rice.

Why made fresh changes everything

Pre-packed onigiri sold in Paris Asian supermarkets are correct but often cold, with hard rice. At MAISON LE TE, onigiri is rolled to order: rice is warm, filling fresh, nori still crisp. The texture difference is immediate. Price is higher (between 5 and 8 EUR per onigiri depending on filling) but the experience is incomparable.
